Last Minute Monday Dinner



I set out to make Smitten Kitchen's tomato pie not quite realizing that it involved a homemade biscuit pie crust, blanching tomatoes and fresh grated cheese. No matter, as it took no time at all (really!) and was so delicious I'd make it again in a heartbeat.
